Seriously though, why are people so obsessed with hygiene in night markets? If there isn't a stray dog under the table and the oil hasn't been changed since the 80s, you're basically just eating overpriced mall food. I want to know where the actual danger is. What's the most 'questionable' dish you've had that actually tasted good? Or are we all just lying to ourselves to feel adventurous while we pray for our stomach lining?
